Zaytoun - From Palestine to Norwich
To date the trade in olive oil, olives, dates, almonds, herbs and couscous (Maftoul) has brought over £1.25 million to the Palestinian economy. Whilst this is a relatively small sum, almost three-quarters of Palestinians live on less that $2 dollars a day, and these farmers rely on selling olive oil for up to half of their annual income.
The olive oil is very high quality and is made all the more precious when you consider that the olive crop is often picked while the workers are coming under live gunfire.
Why Not Try Maftoul As Part of Your Salad Bowl
Maftoul is made by rolling moistened coarsely ground semolina wheat into small balls, which are then coated with finely ground wheat flour. The finished granules are roughly spherical shape and about one millimetre in diameter before cooking. Maftoul is a larger grain than other varieties of couscous and is deliciously nutty in taste and is among the healthiest grain-based products.
